Recipe - Broccoli and Pine-Nut - Paleo Diet Soup

This Broccoli and pine-nut paleo diet soup recipe is perfect for people looking to maintain their health on a paleo diet. Both broccoli and pine nuts are regarded as superfoods so you'll get a double whammy of nutrients in this delicious meal!

Ingredients

  • 1 onion, diced
  • 1tbs oil
  • 3 cups broccoli
  • 3 cups chicken or vegetable stock
  • ¼ cup pine-nuts

Instructions

Add the oil to a large pan and fry the onion on medium heat until slightly browned.

Add broccoli and the stock and simmer for 10-15 minutes, or until the broccoli has softened.

Turn off the heat and leave the ingredients to cool slightly.

Place the contents of the pan in a food processor or use an electric blender to form a smooth texture.

Heat the soup and sprinkle with pine-nuts to serve.
